Learn to create authentic, Indian home-style vegan cuisine. The highlight of the class is trying your hand at making Phulka/Roti. This soft and fluffy Indian whole wheat flatbread is a staple in home-style cooking. Learn the techniques of mastering the roti from making the dough to rolling and cooking the puffy phulka! Together we will also make a seasonal Bhoplyachi Bhaji (Pumpkin subji) that complements the phulkas and a one pot Batate Bhat (Basmati rice cooked with potatoes and spices), which can be a meal by itself. With step-by-step instructions, you will gain the knowledge from sourcing to storing the ingredients, the confidence to recreate these recipes in your kitchens and the cultural insights into these dishes. We will gather around the table to sample and discuss our creations at the end of class. Ingredient fee of $20 payable to the instructor at the class.  *Class held at the instructor’s home professional/licensed kitchen in Lexington (right on the Bedford-Lexington border) Address will be emailed 2 days before the class.     
Instructor Bio: Sandhya Rege Nadkarni has been teaching public and private cooking classes for over 12 years. She creates content and develops authentic Indian and innovative fusion recipes for her popular blog INDFUSED @indfused.com which also offers branded online products, including spices and recipe kits.  Her focus is to create healthier, streamlined, delicious recipes with easily available ingredients.
